Decadent Chocolate Cake
And by decadent, I don't mean overly rich. I actually mean the m-word... (ya know: m-o-i-s-t.) Apparently people can get a bit touchy about that word but as a baker I love it! Maybe because I experienced far too many dry cakes while living in England? Trust me, I'd take the m-word any day over a dry cake! And as far as chocolate cakes go, this has been my preferred recipe for about 20 years. It's that good. So go ahead and throw all your other chocolate cake recipes out. This is it. With the addition of coffee not only is this cake delicious, it is incredibly....um...decadent.
Ingredients
Dry Ingredients:
1 pound 8 ounces All-Purpose Flour
2 teaspoons Salt
2 teaspoons Baking Powder
4 teaspoons Baking Soda
12 ounces Cocoa Powder
2 pounds Granulated Sugar
Liquid Ingredients:
16 ounces Vegetable Oil
16 ounces Coffee, hot
16 ounces Milk
Other Ingredients:
4 each Eggs
1.5 teaspoons Vanilla Extract
Procedure
1. Prepare pans with fat and flour before lining the bottom with parchment paper
2. Sift dry ingredients together using a sieve or fine mesh strainer before placing in a mixer with the paddle attachment
3. Add liquid ingredients. Mix at medium speed for 30 seconds. Stop and scrape bowl. Continue to mix on medium speed for an additional 90 seconds, scraping half way through
4. Add eggs and vanilla. Mix for an additional 2 minutes. This will produce a thin batter
5. Fill pans half full and bake until done (about 40-50 minutes for 8" pans)
Things to Know
1. Due to the high volume of liquids, this recipe produces a thin batter. Just trust the process because it's amazing!
2. Although there is coffee in this recipe, the flavor does not overpower the chocolate. Most people probably wouldn't realize there's coffee in the recipe from taste alone. It just helps develop the richness of the flavor profile of the cake
